Blueberry Fools

A beautiful and simple dessert with fresh berries

 

For 4 servings, you will need:

2 Cups of blueberries

½ Pint of heavy cream

Seeds from 1 vanilla Bean

4 tbs cane sugar

12 Royal Dansk Oat & Blueberry cookies

 

Wash the berries and pat them dry with a paper towel. Distribute into 4 dessert glasses (looks beautiful in clear cocktail glasses)

 

With a sharp knife, cut the vanilla bean down the middle, until "butterflied". Scrape the small vanilla seeds off with a spoon. Pour a small amount of the heavy cream into a bowl and smush the vanilla seeds into the cream until they are thoroughly mixed in. Then pour the rest of the cream into the bowl along with the sugar, and mix until the cream is lightly whipped. Pour the mixture over the blueberries.

 

Finally, add crumbled pieces of Oat & Blueberry Cookies on top of the fools.

 

Serve and enjoy.
