You will need
2 pints of your favorite vanilla ice cream
¼ cup espresso or 1 tsp instant coffee disolved in 1 tsp water
8-12 Royal Dansk Butter Cookies, crumbled into bite-size pieces
½ cup hazelnuts, chopped. Can be toasted in the oven for 10 minutes at 355°F


Take the ice cream out of the freezer and let it sit on the countertop for 10 minutes.


Mix the ice cream and coffee in a bowl. Put the ice cream back in the container and re-freeze for about 30 minutes.


Scoop the Coffee Ice Cream into coffee cups and decorate with chopped hazelnuts and crumbled butter cookie pieces.


Tip: You can also buy ready-made coffee flavored ice cream or use an ice cream flavor of your choice, and just add the crumbled butter cookies and hazelnuts.
