Semifreddo with Cookies & Cranberries
½ cup pasteurized egg yolks
¼ cup sugar
1 vanilla bean
Cut the vanilla bean down the middle and scrape out the vanilla with a spoon. Mix the ingredients and then whisk them until they have a light texture.
½ cup heavy cream
1 tablespoon powdered sugar
Whip the cream to almost stiff peaks.
½ cup pasteurized egg whites
1 tablespoon sugar
Whisk the ingredients to a meringue.
1.8 oz or 4 tablespoons dried cranberries
10 crumbled cookies
Mix the lightly whipped cream with the egg mixture and lastly the meringue Distribute the mixture into four large bowls or eight small sorbet glasses. Add the cranberries and cookies on top. Place the desserts in the freezer for at least 4 hours. Serve them after adding more dried cranberries and your preferred cookie on top.Print Recipe
