Stewed Apples with Cookie Crumbles

Stewed Apples
5 tart apples or 1 lb 9 oz apples
1.8 oz cane sugar
1 vanilla bean
3.5 oz or ½ cup water

 

Peel the apples and remove the cores. Cut apples into small chunks. Cut the Vanilla Bean down the middle and scrape out the vanilla seeds. Put the apples, sugar, vanilla and water into a sauce-pan. Let the ingredients simmer at medium temperature with the lid on for approximately 30 minutes, or until the apples have a coarse texture (or "are tender").

 

Tip: Add the vanilla bean to the other ingredients while cooking and remove it when cooked.

 

Topping
16 Coconut Style Cookies
9 oz or 1 cup sour cream 38%
1/3 cup coconut flakes

 

Serving
Pour the stewed apples into a bowl and distribute 8 crushed cookies over them. Put the sour cream (which could be whipped with a hand mixer) on top. Distribute the rest of the crushed cookies on top of the sour cream, and lastly top it with fresh coconut flakes.
