Warm Apple Pie

You will need
4 oven proof serving dishes (individual)
16 Royal Dansk Butter Cookies, coarsely crumbled
2 apples, McIntosh or Granny Smith, peeled, cored and thinly sliced
4 Tbsp sugar in the raw
Zest of ¼ organic lemon
3 oz puff pastry
2 Tbsp maple syrup
3 Tbsp confectioner's sugar

Roll out puff pastry w/ 2 Tbsp confectioner's sugar. Place oven proof serving dishes upside down on pastry, press down and trim around the edges. These puff pastry shapes will be the lids. Cover with a damp cloth and put aside.

Distribute half of the coarsely crumbled butter cookies on the bottom of the oven proof dishes. Cover the crumbles evenly with half of the apple slices and sprinkle with sugar. Add another layer of cookies, apple slices and sugar on top.

Place the puff pastry lids on each of the dishes. Brush puff pastry with maple syrup and sprinkle with remaining sugar in the raw. With a bread knife, cut an X in each lid.

Bake for 15 minutes at 390 °F.

Dust with remaining confectioner's sugar and serve with vanilla ice cream.
